Strawberry Chocolate Pudding Ice Pops

There’s always room for Jello (Pudding Pops)!

Growing up my mom always used her Tupperware Ice Pop Molds to make me fresh Ice-Pops all summer long! When I moved into my own house, mom figured she would not be making many more pops (until at least she had grand kids to make them for) so she gave me her molds, yay! One of my favorite (and easiest) ice pops always were Pudding Pops (which I also found out were also Rich’s favorite type when he was growing up – I love being able to make my PA Wedding Photographer Fiance happy).

Basically all that needs to get done for the Perfect Pudding Pops is to start out by making your favorite Pudding (instant or homemade or cooked). Then you just need to pour that pudding into your pop mold of choice (store-bought or ice cube trays, or silicone molds, or paper cups), and then freeze them up for a few hours.

After Strawberry Picking last week I knew that some Chocolate Covered Strawberry flavored Ice Pops would be amazing. So taking my love of Pudding Pops and then just adding some fresh Strawberries to the mix equaled these delicious Chocolate Covered Strawberry Pudding Pops!

Fresh Strawberry Pudding Ice Pops

Strawberry Chocolate Pudding Ice Pops

Ingredients
  • 1 box pudding mix
  • milk (as per pudding mix directions)
  • 1/2 cup (???) strawberries – cut in half if the whole berries don’t fit into your pop mold of choice
Instructions
  1. Make the Pudding as per the package directions.
  2. Place a few pieces of Strawberry into each Pop-Mold (up to you how strawberry dense you want these, I did about 3 berries/half berries per pop). Carefully pour your Pudding into the mold. You will want to go back a second time to finish filling the molds since the pudding needs to find its way around your strawberry chunks.
  3. If you are using a mold that needs a stick placed in it (where the mold will hold the stick in place) put your sticks in there now. If you do not have a way to hold your sticks up, allow the pops to freeze to about an hour and then carefully insert your sticks. Allow your total pops to freeze for about 3 hours.

 

When you are ready to enjoy your pops, run under cool water to allow the pop to release themselves. Sit back & enjoy!
