Chocolate Ricotta Mousse

So often when you are done with your recipe that you bought your big container of ricotta for (and you always buy the bigger one because it is more cost effective that way), you still have ricotta left and you don’t know what to use it for. I decided to go on the hunt for a healthy dessert that I could indulge in without feeling guilty.

This comes together in about 5 minutes (plus a little bit if you want it chilled) so you can whip this up any time you are craving something slightly sweet and chocolaty. If you are used to making healthy switches in your diet this will be more than perfect for you. If you are, like my family, not used to subbing healthy alternatives in for other things – this may not satisfy your sweet tooth. If you (or your family) want it more sweet – just add more sweetener!

Even though this didn’t go over too well with the other people I shared this with – I thought it was just fine and just sweet enough to stop me from going crazy on something less healthy later! Please try this out and let me know what those close to you thought about it!

Chocolate Ricotta Mousse Cups

Ingredients
  • 2/3 cup [whole milk] ricotta cheese
  • 2 Tbsp good cacao powder
  • 1/2 tsp pure vanilla extract
  • 2 tsp honey (or agave or other liquid sweetener)
  • pinch of pure stevia powder or liquid stevia to taste (if you don’t want to use stevia, increase the honey/agave)
  • couple shakes of ground cinnamon
  • top with: 1/3 cup fresh berries (blueberries, raspberries, strawberries or even bananas or orange sections)
Instructions
  1. In a small bowl, combine ricotta, cacao, vanilla, sweetener and cinnamon. Stir well and adjust sweetness to taste (if you are not used to ‘healthy’ desserts you will probably need to add a lot more sweetness) Add half of the chocolate ricotta mixture to a cup, glass or small dish. Top with half of the berries. Repeat with remaining ricotta and topping ingredients and enjoy with a friend or two
