Goat Cheese stuffed Plums

Summer seems to make us want beautiful, light, and deliciously healthy foods!

Now that our CSA is in full swing we are getting lots of a few different fruits/veggies at the same time. I love the challenge of getting a lot of one or two different tasty goodies all at once. We got about 3 pounds of beautiful, sweet Sugar Plums in our pick-up last week. Three pounds of most fruit is not too much – but these little beauties are tiny, so it was quite a few! I have not yet gotten into canning at all so I enjoy finding ways to use them all up while fresh and delicious. Gina over at Running to the Kitchen seems to have a similar method to her cooking since she always posts something that I want to eat exactly then!

After seeing Gina’s beautiful stuffed plums the other day, I picked up some Goat Cheese on my Supermarket run the other day. I picked up a pretty good-looking cheese that was on sale – with cheese though, you get what you pay for and this might not have been the best option this time. The complexity of all of these flavors is just amazing – not what your are used to, but totally worth experimenting and playing!

Goat Cheese & Honey stuffed Plums

Goat Cheese stuffed Plums

Serves: 6
Ingredients
  • 6 sugar plums or 4 or your slightly larger, regular plums
  • 2 ounces goat cheese
  • 1 teaspoon honey
  • 3 leaves basil, chopped and divided
Instructions
  1. Wash your plums & carefully cut in half (either direction). Twist to remove half of your plum and then cut the pit out of the other half (the pit does not remove as easily as in a peach – but we are working on the same concept here).
  2. Combine goat cheese & honey in a small bowl and mix together with a spoon.Carefully spoon cheese mixture into the well of each plum half.Top each with a few slivers of basil.
