Chocolate Covered Marshmallows – “Smore’s Pops”

We love S’mores around here! One of the great joys of the summer is relaxing around a campfire just hanging out with friends. While enjoying that fire – marshmallows toasted (or burnt) to perfection are just right! After enjoying that fire you come inside to head to bed and realize that you now smell like you’ve been camping all week.

Chocolate Red Wine Cupcakes

Most everyone enjoys Chocolate (and those that don’t need their heads checked, but that’s just my unsolicited opinion). Also, almost everyone can also find a Red Wine that they like (even if they don’t agree with those around them on what makes it good).

These Cupcakes combine the love of chocolate & wine.

For these Chocolate Red Wine Cupcakes I figured the Cupcake Winery wine would be a perfect pairing! Cupcake Winery’s Red Velvet is a combination of Zinfandel, Merlot, Cabernet Sauvignon and Petite Sirah – which has all of the perfect elements to pair with chocolate! But, if you enjoy sweet fruits a great wine would be a nice Blackberry or Strawberry Wine – that would make this a very sweet variation but I can’t wait to try that!! No matter what, the flavor of the wine will be a nice subtle undertone to the cupcakes but will shine through more in the frosting, so be sure to use something that you like!

Chocolate Peanut Butter Cup Cookies

Recently my ‘kids’ at Big Boulder requested that I make them some goodies. This always works out to be a win-win-win because I get to try new recipes and Rich gets some treats left at home and I get to make others smile! You can easily make others smile by making them these for Valentines Day, since almost everyone loves the combination of Chocolate & Peanut Butter!

I also brought some of these to my parents & mom’s immediate reaction was that I needed to make these again (which was also the reaction of others who tried them). These are so easy and totally delicious – a great balance between the sweet and salty… amazing!

Chocolate Covered Oranges

Was one of your News Years Resolutions to “Make Healthier Eating Choices”?

BUT – do you love Chocolate too much to give it up in the effort to eat healthier?

Well… you are in luck, I have the perfect solution for you! These Chocolate Covered Orange Slices can satisfy your sweet tooth and your need for chocolate while also giving you a boost of Vitamin C and are almost a healthy food. To be honest – I used some Cuties Clementines instead of Oranges (you can’t beat the price and they are so sweet and easy to peel and no need to worry about the seeds either). It doesn’t matter if you use Oranges or Clementines or Tangerines, these are so easy to make and look so pretty (and are a cheaper way to get that Chocolate Orange fix than those fancy Terry’s orange shaped chocolate things). So pick your favorite citrus and make this super fast and easy treat to bring a smile to those around you (or to make yourself smile).

Chocolate Covered Clementines

  • 1 clementine (peeled)
  • 1/4 cup chocolate chips (semi-sweet or whatever you like), you might have leftovers
  • 1 teaspoon shortening

Melt the chocolate and the shortening in the microwave on half power for 30 second increments, stirring after each 30 seconds. This will take at least a minute and a half. Make sure all of the little while string parts of the orange are off of each slice. Dip about half of the orange (or whatever) into the melted chocolate and allow the extra to drip (or be shaken) off of the orange. Carefully place dripped slices onto a sheet of wax paper and let set in the ridge for about 30 minutes. Once hard these can be stacked on each other and packed for gifts or lay out on a tray for tasty treats.

And remember: everyone loves chocolate dipped oranges, so the next time you haveĀ  chocolate fondue be sure to put some oranges in the mix!
