Air Fryer Cauliflower & Broccoli Bites
Remember when Cauliflower Wings were like THE THING to eat – maybe they still are, I don’t know – I’m not really that trendy!? Well, I think they are AMAZING and now that I’m really starting to get the hang of my Air Fryer, I made these and they are super easy to whip up in no time!
I love that I can make these SO crispy, dirtying just one bowl in the prep work. We love roasted vegetables all year long, and these have the feel of a deep fried vegetable fritter without all the mess and unhealthy side effects of the oil.
Feel free to spice these up as much or as little as you like. Mr. Chef and I (and surprisingly Little Brother Chef) prefer them tossed with some Hot Sauce while Sister Chef likes them just dipped in some Ranch.
Air Fried Cauliflower & Broccoli Bites
- 2 cups cauliflower florets
- 2 cups broccoli florets
- ½½ cup each regular seasoned & panko bread crumbs
- ¼ cup grated Parmesan
- 1 Tbsp. seasoning of choice (or just use salt/pepper/garlic)
- 2 cups cauliflower florets
- 2 cups broccoli florets
- ½ cup whole wheat flour
- 2 large eggs
- 1 Tbsp Water or Milk
- 1 Tbsp. fresh parsley (finely chopped, optional)
- Hot Sauce (optional)
- Preheat air fryer to 400°F (I personally skip this step and just place it into the basket cold and let it heat with the food in, easier set up and I can work without rushing or risking burning myself)
- In a large bowl (preferably one with a lid so you can cover & shake), place your cut broccoli/cauliflower.
- Dump in your Flour & Shake to Coat
- Wisk your eggs with the Water & Milk then dump that mixture on top of your coated Veggies and shake well to get them evenly wet.
- Combine Bread Crumbs, Parmesan, and seasoning. Dump all of that onto your now wet Veggies. Shake Well & make sure every piece has as much of a coating as possible.
(if you didn't preheat – give your basket a light spray of cooking oil) Place florets in basket and set your Air Fryer to 400° (be careful not to overlap) and cook until golden and crispy, about 5-6 minutes.
- Remove from fryer basket and sprinkle with parsley OR toss in some Hot Sauce (or sauce of choice) and put back in Air Fyer for an additional 2 minutes.
If you are making your own spice mixture, use about 1/2 Tbsp of Salt, 1/4 Tbsp Pepper, 1/4 Tbsp Garlic – or play with your favorite blends)
If you only have regular OR panko bread crumbs, either will work – the combination just cooks up the crispiest and best
